Ingredients
  • 4 long green chillies
  • 1 bunch coriander
  • 1 bunch mint leaves
  • 6 cloves garlic
  • 1 tsp cardamom seeds
  • 1 tsp ground cumin
  • ¼ tsp ground cloves
  • ¾ cup extra virgin olive oil
  • finely-grated zest and juice of 2 lemons
  • 1½ tsp chilli flakes
  • sea salt flakes and freshly-ground black pepper
Method
  • 1 Char the chillies over a flame until blacked, then rinse to remove the skin. Split and scrape out the seeds. Place the chillies, herbs, garlic, spices, oil, zest and juice in a food processor and puree until a coarse paste forms. Add the chilli and season with salt and pepper, then pulse to combine.
