Ingredients
  • Corned beef (rinse under cold water)
  • Juice and zest of 1 orange
  • 2 onions, peeled and quartered
  • 2 cups beef stock
  • 2 jalapeños sliced
  • 1 tablespoon hot smoked paprika
  • ½ teaspoon cumin
Method
  • Place the quartered onions in a large pressure cooker. Add corned beef, orange juice and zest, beef stock and spices.
  • Close lid and set to cook for 1 hour 10 minutes^, once timer goes off allow steam to escape and rest for a further 20 minutes before opening lid. ^Appliances vary, please adjust cooking times if necessary. Always ensure product is cooked thoroughly prior to consumption.
  • Remove corned beef from cooker and transfer to a large bowl; shred corned beef using two forks or pull apart with fingers whilst wearing gloves. Add a little cooking broth back to the corned beef to allow it to remain moist.
  • Serve corned beef in toasted tortillas with guacamole, shredded cabbage, chipotle mayonnaise, pico de gallo, tajin and coriander.
